This Churros Ice Cream is rich, creamy, simple to make, and tastes like cinnamon sugar heaven with ribbons of dulce de leche throughout. The best part? You only need a handful of ingredients and an ice cream maker.

Ingredients
1½ cups whole milk
1 cup granulated sugar
Pinch of salt
3 cups heavy cream
1½ teaspoons vanilla extract
1–2 teaspoons ground cinnamon (adjust to taste)
½ to ¾ cup dulce de leche (or more if your heart says yes 😍)
Instructions
Step 1: Make the Ice Cream Base
In a large mixing bowl, whisk together the milk, sugar, and a pinch of salt until the sugar mostly dissolves.
Pour in the heavy cream and vanilla extract, stirring until combined.
Cover and refrigerate for at least 2 hours (overnight is even better for creamier ice cream).
Step 2: Churn
Pour the chilled mixture into your ice cream maker and churn according to your machine’s instructions.
Step 3: Add the Churros Magic ✨
When the ice cream has about 7–10 minutes left of churning, add:
Cinnamon (start with 1 teaspoon and adjust to taste)
Spoonfuls of dulce de leche
The machine will gently swirl everything together, creating ribbons of caramel goodness throughout the ice cream.
Tip: Don’t overmix — you want little pockets of dulce de leche!
Step 4: Freeze
For soft-serve texture, enjoy right away.
For scoopable ice cream, transfer to a freezer-safe container and freeze for 1–2 hours.
Let sit on the counter for about 10–15 minutes before serving for the perfect creamy texture.
