Sourdough Pumpkin Bread

Ingredients
• 250g water
• 100g sourdough starter
• 10g salt
• 200g pumpkin purée
• 400g all-purpose flour
• 50g whole wheat flour
Instructions
1. Mix the dough
In a bowl, mix all ingredients until combined. Clean the sides of the bowl.
2. Rest
Let the dough rest for 30 minutes.
3. Stretch & folds (first set)
Do your first set of stretch and folds (total of 3 sets, spaced 30 minutes apart).
• First set: 20–30 stretches until dough starts to build some resistance
• Second set: 8–10 stretches
• Third set: 1–2 gentle stretches
4. Bulk fermentation
Lightly oil a glass bowl with olive oil and transfer your dough.
Let it rest for about 5 hours at room temperature, or until it has roughly doubled.
5. Pre-shape
Gently pre-shape your dough and let it rest for 30 minutes.
6. Final shape
Shape your dough and place it in a floured banneton (don’t forget to sprinkle with flour).
7. Cold proof
Place in the fridge overnight to proof.
8. Bake
• Preheat your oven (with your Dutch oven inside) to 500°F
• Score your dough
• Bake with lid on for 20 minutes
• Remove lid and bake for another 12–15 minutes until golden
9. Cool
Let your bread cool completely on a rack before slicing.
